Small Plate Saturday With Actual Food

One thing I did really well this week was the housewife thing.  I’m going to go ahead and toot my own horn, several times, out loud.  I may have only made it to yoga thrice… but every day this week I made a real dinner, had the house cleaned up, a lunch for hubs to take to work, and even hosted a girl’s night.  I wanted to share two of the recipes I made because they were super easy, and really good.

Early in the week, I had a hankering for meatloaf (plus a lb. of ground beef in the freezer… use what ya got!)  I went to the obvious expert on this topic: my mom!  Look, I get it if you have a super exciting recipe for cajun meatloaf or some junk but I don’t want that.  I want basic, moist, traditional meatloaf and more than that, I want a cold meatloaf sandwich with ketchup for lunch the next day.  Straight Americana.  I used my mom’s ingredient list and a very simple recipe to use for ballpark measurements.  We Italians don’t measure.  Then, for what was supposed to be date night, Friday (we both decided to move it to Saturday and opt for falling asleep to Gladiator instead,) I made a new enchilada recipe that I’m slightly obsessed with now.  Read on, read on.


Home-Style Meatloaf (Betty Crocker) – I used this recipe just as a guide for ingredient size.  It really doesn’t matter if you adjust or add things that would make it more interesting for you.  I like my meatloaf smooth, moist, and without a lot of BS like green peppers.  WTF is that about?  Here’s my exact list, based on my mom’s instructions: eggs, Italian-style breadcrumbs, a dash of oats, onion, garlic, parsley, and a ketchup and water glaze.  This isn’t a French bistro.

Sweet Potato and Black Bean Enchiladas (The Curvy Carrot) – Loved this recipe, except that I didn’t see any inclusion of seasonings for the enchilada filling… so of course I added salt and pepper to taste, plus some chili powder, a spicy salsa, and a salsa verde for the top.  I sprinkled some fresh cilantro spread out some avocado goodness, as well.  I could eat avocado with just about anything.
